Ingredients for the Dressing:
- 1 cup Greek Koroneiki Olive Oil
- 1/3 cup Lemon Balsamic
- 1 tsp Mediterranean Seasoning
Ingredients for the Salad:
- 3 large plum tomatoes, seeded and chopped
- 1 cucumber, peeled, seeded and chopped
- 1 bell pepper, seeded and chopped
- 1/2 red onion, chopped
- 1/2 cup Kalamata Olives, pitted and chopped
- 1/2 cup crumbled feta cheese
Directions:
Whisk together the olive oil, balsamic and seasoning.
Combine the tomatoes, cucumber, onion, pepper and olives together in a large bowl. Toss with the dressing (use only as much as needed to coat the salad). Sprinkle the cheese on top and serve.
Save any remaining dressing in an airtight container in the fridge for future use.
