Jicama Salad with Cilantro and Lime Vinaigrette Ingredients: 1 medium jicama, peeled and julienned 1 cup cilantro, leaves and stems chopped 1/4 cup Lime Olive Oil 1/4 cup Serrano Chile Honey Vinegar 1 tbsp honey 1 tbsp Dijon mustard salt and pepper to taste Directions: Whisk together the oil, vinegar, honey, mustard, salt & pepper. Stir in the cilantro then toss with the jicama. Serve immediately.

Preheat your Himalayan Salt Block slowly, on a grill or gas stovetop. Cut the salmon into fillets, and brush the skin with Lime Olive Oil. Place the salmon skin side down on the preheated salt block for about 5 minutes, or until the skin is crispy. Flip and continue cooking until salmon is cooked through.  To finish the dish, spoon our fruit salsa over the top of each salmon fillet.
