- 1 pound of mixed veggies
- Shrimp, or your protein of choice
- Jalapeno Olive Oil
- Fajita or Taco Seasoning
Julienne or slice veggies. Cut protein into bite size pieces. Combine 1 tbsp Fajita seasoning, 1 tsp lime juice, 1/4 cup of Tequila, and 1/4 cup of New Canaan Olive Oil (we like Jalapeno Olive Oil in this recipe, but you can use any of our spiced or traditional olive oils). Mix until well blended.
Add most of your veggies* and all of your protein to the bowl to marinade for at least 15 minutes, stirring every 5 minutes to keep all ingredients coated in marinade. In a HOT and heavy (cast-iron) pan, add the ingredients from the marinade (without the liquid) in batches (should be a single layer) and cook until browned/charred. Repeat until all ingredients are cooked. Serve with warmed tortillas, sour cream and guacamole.
*Softer veggies (like zucchini) should be added to the marinade towards the end to avoid mushiness.
