Peach and Rosemary Roasted Whole Chicken

Sweet, savory, and delicious! This recipe calls for the whole chicken, but the ingredients work just as well with chicken pieces, chicken breasts, or even wings.


  • 1 whole chicken (4-5 pounds)
  • 4 peaches, halved with pits removed
  • 2-3 sprigs fresh rosemary, leaves removed from stem
  • 4-6 garlic cloves, whole
  • 1/4 cup Peach Balsamic 
  • 1/4 cup Rosemary Olive Oil 
  • salt and pepper to taste


Preheat oven to 375 degrees Fahrenheit. Put chicken breast-side up in an oven safe pan. In a bag or small bowl, combine peaches, rosemary leaves, garlic, balsamic, and olive oil and mix well. Pick up peach halves and place them around the chicken in the pan. Pour the remaining mix evenly over the chicken. You can use your hands to make sure the mix is covering all of the chicken skin. Sprinkle skin with salt and pepper and put into preheated oven. Cook until the internal temperature reaches 160 (about 60-90 min) and allow chicken to rest 10 min before carving. Serve the peaches alongside the chicken.
