Oregano Lemon Mediterranean Chicken with Cauliflower Rice

This recipe blends our Oregano Balsamic with our Meyer Lemon Olive Oil for the perfect Mediterranean flavor!

Ingredients:

  • 6 oz of Oregano Balsamic
  • 6 oz of Meyer Lemon Olive Oil
  • 5 oz chicken stock
  • 1/2 tsp Mediterranean Seasoning
  • 1 tsp butter
  • 1/2 medium onion, diced
  • 6 chicken thighs
  • Desired amount of raw cauliflower blended until it’s all broken up to look like rice (for best results use a blender or food processor)

Directions:

Marinade chicken thighs in Oregano Balsamic, Meyer Lemon Olive Oil, Mediterranean Seasoning and 2 oz of chicken stock for 4 hours (the longer you let it marinade the sweeter the chicken will turn out). Heat a skillet and add butter and onions. Once the onions start to brown remove them from the pan and put aside. Put chicken into pan and add the rest of the chicken stock. When chicken is partially cooked flip it on the other side. Once fully cooked, take chicken out and add cauliflower into pan with the rest of the juice. Cook for a few minutes until its softened (and not as opaque in color). Add the onions to the cauliflower and gently mix together and serve with the chicken.
