Italian Salsa Verde by New Canaan Olive Oil


  • 1/2 cup finely chopped fresh parsley (packed)
  • 1/2 cup Gremolata EVOO
  • 1 tbsp capers, chopped
  • 2 garlic cloves, finely chopped
  • 2 tbsps grated parmesan cheese
  • 2 tbsps Red Wine Vinegar
  • salt & pepper to taste


In a medium bowl, combine all of the ingredients except for the olive oil until they are mixed well, almost to a paste. Slowly drizzle in the olive oil while stirring. Use more or less oil to reach your desired consistency. Spoon over scallops, pork, steaks, lamb or chicken.
