Italian Jam Cookies

recipes with Raspberry Chocolate Spread

Make these sweet jam cookies for your holiday cookie exchange or for any occasion! 


  • 1 cup shortening
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 egg yolks
  • 3 tbsp. milk
  • 2 tsp vanilla
  • 2 2/3 cup flour
  • 2 tsp cream of tartar
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1/2 cup Raspberry Chocolate Spread available at NCOO 


Preheat oven to 350 degrees.

Mix all ingredients, except for the chocolate spread, in a bowl to form a dough. Cover and chill for an hour. Roll dough into 1/8 inch thickness and cut into circles with a shot glass or cookie cutter of your choice. You will need two pieces of dough for each cookie. Place 1/2 teaspoon of jam on one cookie and top with another circle. Take a knife and put a little hole in the center to expose the jam center. Place on greased cookie sheet and bake for about 10 minutes, or until slightly browned. Cool and dust with powdered sugar.
