Gremolata Green Beans (serves 4-6)
This is an easy recipe that I love to serve with our Easter dinner or when I need to throw together a quick side dish!
- 1 lb French green beans, trimmed
- 4 tbsp Gremolata Olive Oil
- 2 tbsp toasted pine nuts
- 3 tbsp Parmesan cheese
- sea salt and pepper, to taste
Bring a large pot of water to a boil. Add the green beans and cook for 2 to 3 minutes, they will still be crisp and bright green. Drain the beans in a colander and immediately put them into a bowl of ice water to stop the cooking.
When ready to serve, heat the olive oil in a large pan over medium-high heat. Drain the beans and pat them dry. Add the beans to the pan and sauté, turning frequently, for 2 minutes, until coated with olive oil. Remove from the heat and toss with the pine nuts and Parmesan cheese. Sprinkle with salt and pepper and serve hot.
