Cranberry Pear and Blue Cheese Salad with Pecan Praline Vinaigrette

Serves 4-6

Total Time: 5 minutes


Ingredients:

1 cup of Arugula

3 cups of Baby Mesclun mix (for the best greens, order from MetroCrops)

1 Pear, chopped into 1 inch pieces

1/2 cup blue cheese crumbles

1/2 cup pecans

1/2 cup dried cranberries

1/4 cup Pecan Praline Balsamic

1/4 cup Blood Orange Olive Oil

1 tsp kosher salt

1 tsp finely ground black pepper

 

Directions:

In a large bowl, toss the greens, pecans, cranberries, blue cheese and pear. Whisk together the olive oil, balsamic, salt and pepper. Right before serving, drizzle with the vinaigrette.
