Chicken Salad with Blood Orange Marmalade and Balsamic

¼ cup orange juice

½ cup Winding Drive Blood Orange Marmalade

¾ cup mayonnaise

¼ cup plain yogurt

3 cups roasted chicken diced

1 tart apple (Granny Smith) peeled, seeded and chopped into small cubes

2 stalks celery finely diced

2 scallions, white parts only, finely sliced

½ cups seedless green grapes quartered lengthwise

Salt and ground black pepper to taste

1 tbsp Balsamic (try Red Apple, Pear, Strawberry or Bordeaux Cherry)


In a mixing bowl add the orange juice, Winding Drive Blood Orange Marmalade, mayonnaise and yogurt and combine. In a large mixing bowl combine the chicken, apple, celery, scallions, and half of the grapes.  Toss with three quarters of the marmalade dressing.  (If the salad seems too dry add additional mayonnaise or yogurt.)  Season with salt and pepper to taste and refrigerate for 1 hour.  To serve, drizzle lightly with the reserved dressing, balsamic vinegar and add the remaining grapes.  The chicken salad can be served in lettuce cups, tartlet shells, or as a sandwich with lettuce.
