Spicy Southwest Salad Recipe by New Canaan Olive Oil
Ingredients
- 3-4 thin boneless chicken breast
- 2 tbsp BBQ Seasoning
- 3 tbsp Extra Virgin Olive Oil
- 2 cups chopped lettuce
- 1/4 sweet corn
- 1/4 cup black beans
- 1 avocado, sliced
- 2 tbsp salsa
- tortilla strips
- 1/2 cup Jalapeño Olive Oil
- 1/4 cup Dark Chocolate Balsamic
Directions
- Cut the chicken into strips. Coat with BBQ seasoning.
- Heat 3 tbsp of extra virgin olive oil in a pan over medium heat and saute chicken.
- Meanwhile add lettuce, corn, beans, and tortilla strips to a large bowl and mix.
- Whisk Jalapeño olive oil & Chocolate balsamic together.
- When chicken is fully cooked, place over salad.
- Garnish with avocado and salsa, then drizzle with the oil & vinegar mixture. Enjoy!
