Recipe: Olive Oil Yogurt Cake

Olive Oil Yogurt Cake Recipe by New Canaan Olive Oil


  • 1 1/2 cups flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 cup sugar
  • Zest of 1 lime
  • 1/2 cup plain whole milk yogurt
  • 3 large eggs
  • 1/4 tsp vanilla extract
  • 1/2 cup Meyer Lemon Olive Oil ( or try the Butter, Lime or Blood Orange)


  • Preheat oven to 350 degrees.
  • Coat an 8-inch round pan with coconut oil, butter or olive oil.
  • Mix the dry ingredients and in a separate bowl whisk the lime zest, yogurt, eggs, vanilla and olive oil.
  • Gently stir all ingredients together.
  • Pour into the pan and bake for 40-45 minutes, until a knife inserted in the center comes out clean.
  • Cool for 5 minutes before removing from the pan.
